Today we take a trip down south to the bayous of Louisiana to honor today’s national food. This thickened, rich stew warms a soul with West African, French, and Choctaw Indian cuisines mixed together. Gumbo comes from the African word for “okra” which is one of the main bases to make the gumbo that thick consistency. Gumbos usually consist of lots of seafood like shrimp, crawfish, crab claws, and lobster tails. Sausages and chicken can also be added to customize this huge pot of Louisiana’s own. Served with cornbread and a healthy scoop of white rice, gumbo would be the best meal for this cooler nights approaching us this fall.
